The four vineyards were fermented and matured seperately.15-20% whole bunches added to a small open fermenter. Remaining fruit destemmed (not crushed) and machine-sorted to remove shrivelled berries. Cold soaked for 5-6 days prior to the beginning of extended natural fermentation (no yeast added). Gently pumped over with the aim of minimising over-extraction of aggressive tannin and other undesireable compounds. Basket pressed to aged French oak (300L and 500L). Aged on fine lees with minimal sulphur additions before racking in August 2017 and June 2018. The components were blended together and bottled in August 2018. Screw cap. 14.5% abv.
