Vineyards: Blewitt Springs, Kangarilla, Onkaparinga Hills.
Soil: Blewitt Springs and Kangarilla- Deep bleached sand and ironstone gravel over orange clay. Onkaparinga Hills- Brown clay-loam and slaty siltstone.
Elevation: Blewitt Springs: 98-107m, Kangarilla- 240-244m, Onkaparinga Hills- 186-201m.

Viticulture: 1930’s and 1960’s heritage (non-clonal) plantings. Hand pruned. Shoot thinned. Crop thinned. Hand picked. Unirrigated.
Winemaking: Hand harvested 20th March, 7th April and 23rd April, 2017. Each parcel fermented seperately. 20% whole bunches added to small open fermenters. Remaining fruit destemmed (not crushed) and machine-sorted to remove shrivelled berries. Cold soaked for 5-6 days prior to the beginning of extended natural fermentation (no yeast added). Gentle pump overs with the aim of minimising over-extraction. Basket pressed to aged French oak (500L puncheons). Maturation on fine lees with minimal sulphur additions before racking in June 2017 and June 2018. Bottled August 2018. Screw cap. 15% abv.
